Hamburger Quiche

Hamburger Quiche


A Great Eat-One-Tonight/Freeze-One-For-Later Recipe!


Ingredients:

1 1/2 to 2 pounds hamburger meat
1/4 cup finely chopped onion
4 eggs
1 cup milk
1 cup mayonnaise
2 Tbsp. cornstarch
3 cups grated extra sharp cheddar cheese

2 Nine inch deep dish frozen pie shells, unbaked


Instructions:

Brown hamburger meat in skillet, and drain off fat.

In a large mixing bowl, combine the first seven ingredients.  Mix well with spoon.

Turn mixture into the two pie shells.

Place both shells on large cookie sheet and place in oven.

Bake at 350 degrees for 30 to 40 minutes, until knife inserted comes out clean.

Serves 4 to 6 people.

Freezes beautifully for two to three months.

(I have also used this recipe and substituted 3 cans of tuna for the hamburger meat, and I have doubled the cheese and left off the hamburger meat for a simple...but delicious cheese quiche.)
