Spice Bread

(A Coffee Cake)

Ingredients:

2 1/2 cups plus one tablespoon all purpose flour
1 cup oil
1 jar junior baby applesauce
1 tsp. ground cinnamon
1 cup finely ground pecans
2 cups sugar
3 unbeaten eggs

2 tsp. baking soda
1 cup buttermilk (not lowfat)

Instructions:

Grind pecans in blender until finely ground.

Butter or spray with cooking spray two quart sized loaf pans (metal or glass).

Mix first seven ingredients in large mixing bowl.

In a separate bowl, mix well the baking soda with the buttermilk.

Pour this mixture into the larger mixture and mix well with electric hand mixer.

Pour the mixture into the two loaf pans.

Bake at 325 degrees for 55 to 60 minutes.

Let cool.  Shake loaf pans to loosen and remove.

Keeps refrigerated for up to one week, and freezes well for up to two months.
